I very easily and quickly get into a rut with food. It’s extra challenging for me to pack a lunch since I try to stick to plant-based foods. Thankfully Pinterest exists to help me find new recipes to try and throw into my rotation of meals. I want to share two new-to-me, very simple recipes that I tried over the weekend.
First one is Chickpea Mash that I discovered on this blog. It’s like egg salad!
It’s simple to make! What you need is 1 can of chickpeas, 1 avocado, 1 tsp of lemon juice, and salt/pepper. Rinse the chickpeas, and then mash all of the ingredients together. Done. It was good on a sandwich, and I think it would also make a good dip for chips or crackers too.
The other recipe I want to share is Chia Seed Pudding found from this website. Boy oh boy, I miss yogurt, and this seems to satisfy that need.
All you need is: 3/4 cup unsweetened almond milk, 2-3 tsp honey or maple syrup, 1 tsp vanilla extract, 3-4 tbsp chia seeds.
Toss the ingredients into a mason jar and shake! Then you just need to be patient for six hours so that it can chill in the refrigerator. After I tasted the first batch I then went ahead and made three more batches to have ready for me. It’s so good and versatile. You can throw whatever you like into it; nuts, berries, granola, carob chips, etc.
I went with raspberries.
